Se realizó el Primer Encuentro Regional de la Cerveza
El pasado viernes se llevó el Primer Encuentro Regional de la Cerveza, organizado conjuntamente por el Clúster de la Cerveza Santafesina y el Centro Científico Tecnológico CONICET Santa Fe, con el objetivo de promover instancias de formación y capacitación al sector.
Más de 70 emprendedores de la región participaron de la jornada que se desarrolló en el salón de usos múltiples de la Cervecería Santa Fe, ocasión en la que pudieron intercambiar experiencias e interiorizarse sobre investigaciones llevadas a cabo por científicos de la región y del país.
Esta primera jornada se realizó en el marco de las acciones de capacitación que lleva adelante el Clúster, espacio que reúne a empresarios, productores artesanales, instituciones vinculadas al desarrollo tecnológico y el sector público con el objetivo de dar un marco institucional y legal al proceso de producción, distribución y comercialización, pero también para instalar esta tradición cervecera como un producto turístico.
Capacitación e intercambio de ideas
“Es muy importante haber recibido en nuestra ciudad este primer encuentro regional que organizamos todos los integrantes del Clúster de la Cerveza Santafesina junto a la oficina de Vinculación Tecnológica de CONICET Santa Fe y Cervecería Santa Fe”, afirmó la secretaria de la Producción del Gobierno de la Ciudad María Soledad Álvarez.
Asimismo, Álvarez destacó la participación de emprendedores de diversas provincias en este primer encuentro, que calificó como “muy productivo tanto para acercar el conocimiento científico a los productores locales y emprendedores de cerveza, como también para favorecer el intercambio de ideas entre ellos y el fortalecimiento de su vínculo para el desarrollo del sector y de la región, posicionando nuestra ciudad como un destino turístico gastronómico, generando más emprendimientos con producción de cerveza en mayor cantidad y calidad y generando empleo, que siempre es el eje de nuestras políticas desde el Gobierno de la Ciudad”.
Por su parte, Lucia Brambilla, responsable de la oficina de Vinculación Tecnológica de CONICET Santa Fe, añadió: “Creemos que el objetivo de poder acercar a las partes está más que cumplido, a estos dos mundos que parecería ser que no se conectan y en realidad tienen muchísimo en común”. En este sentido, Brambilla destacó la tarea de vinculación tecnológica de la institución que representa en la región: “CONICET está siempre ávido de abrir las puertas a la producción, de tener casos reales, de aplicar todas esas tecnologías e investigaciones que desarrollan en cuestiones reales, en mejorar la calidad de los productos, en este caso de la cerveza industrial y artesanal y de todos los procesos que están involucrados en la producción de la cerveza, para optimizar la calidad de la misma pero también para optimizar todos los procesos y posicionarnos de manera más competitiva y favorecer el desarrollo no sólo de nuestra región sino también a la larga, de la Argentina”.
Sobre la jornada
El principal objetivo del encuentro fue promover e impulsar entre los emprendedores y maestros cerveceros la producción, mayor volumen, la calidad de los procesos y la mejora de la competitividad de las cervecerías de la ciudad y la región para consolidar el área como un polo cervecero y turístico a nivel nacional.
Participaron más de 70 emprendedores de las ciudades de Santa Fe, Esperanza, Rosario, San Lorenzo, Sastre, Paraná, San Jerónimo Norte, Pergamino, Santo Tomé, Aldea Brasilera, Franck, San Carlos Centro y Sud, Romang y Hasenkamp.
La jornada comenzó con la disertación “Adecuado almacenamiento y distribución de la cerveza” a cargo de Adriana Paonessa, Especialista en Calidad y Jefa de Control de Calidad de Cervecería Santa Fe, Docente de la FBCB – UNL y UTN. A continuación, la segunda charla versó sobre el “Tratamiento y valoración de los afluentes de la industria cervecera” a cargo del Dr. Lisandro Seluy del INTEC – CONICET– UNL. Y el encuentro finalizó con la charla sobre “Microbiología cervecera y análisis del lúpulo argentino” a cargo del Dr. Diego Libkind del INIBIOMA – CONICET – UNComa, uno de los laboratorios de referencia del país en el tema de levaduras.
